Kiwi Served up Three Ways

Serving up delicious kiwi in three different ways! It was a fun Oogaa challenge, and I definitely plan to do this again with other ingredients. The kids’ favourite produce really depends on the day of the week, but lately we’ve been enjoying kiwi, so I chose this ingredient for my challenge. Raw is a fun way to go, because you can make or prepare your dish within minutes. So I chose to make an ice pop, serve it fresh, and make some chia pudding.

Ice Pop Ingredients:
1 kiwi
7 guavas
1 tangerine
cashew “milk”

Ice Pop Instructions:
Blend all ingredients
Pour into mold

Kiwi & Chopped Cherries:
1 kiwi cut in half
6 dark cherries cut length ways into four slices each

Kiwi Chia Pudding Ingredients:
3-4tbsp. chia seeds
5oz breastmilk
1/2 kiwi

Kiwi Chia Pudding Instructions:
Peel and chop kiwi into really small pieces
Place ALL ingredients in a container
Seal it tight, and let set overnight
The following day, open and serve

Mashed Butternut Squash & Apple

Ingredients:
2 “red delicious” apples
1 medium size butternut squash
cinnamon
Garlic and Herb seasoning blend (optional)
Extra virgin olive oil

Instructions:
Preheat oven at 380 degrees
Wash and cut your butternut squash in half
Brush some oil on the cut sides of the squash
Sprinkle spice on top (optional)
Place cut side DOWN on baking sheet
Roast in oven for 45 minutes,
or until you can pierce all the way through
Once removed, let cool and then peel off the skin
Flip them over, and scoop out the soft center where the seeds are
Set aside

Wash, peel & chop apples
Add a pinch of cinnamon
Steam until tender
Combine all ingredients to a large bowl and hand mash using a potato masher
(no blender needed)
Serve

*I froze the remaining portions in my Kiddo Feedo silicone freezer tray as shown above. Roasting time for the squash will vary depending on size.

Red Kidney Beans & Roasted Cauliflower

Ingredients:
1 head cauliflower
1 chopped garlic clove
Extra Virgin Olive oil
1/2c cooked red kidney beans (follow package instructions)

Instructions:
1.Preheat oven at 425°F
2.Chop your cauliflower into florets
3.Place on a FLAT baking pan
4.Add onion, garlic
5.Drizzle with olive oil
6.Roast for 30 minutes
7.Remove from oven and add to blender, along with your cooked red kidney beans
8.Blend and serve

Kale, Green Peas & Eggplant

Ingredients:
1 large eggplant
1/2 cup frozen green peas
1 handful fresh kale
Extra Virgin Olive Oil

Instructions:
1.Bring a pot of water to a boil
2.Add the peas and boil for 3 minutes or until soft
3.Drain peas and set aside
4.Heat up a pan with a little olive oil
5.Chop your eggplant and kale
6.Stir fry them until eggplant is brown
7.Blend all ingredients together
8.Let cool and then serve

Avocado & Mango

Ingredients:
1 Mango
2 avocados
2oz pumped breastmilk or cashew milk

Instructions:
Blend ingredients and serve immediately, as avocado may turn brown once it has been in contact with the air for too long. It’ll still be safe to eat, but this process changes the flavour slightly. I froze the remaining portions in my silicone @KiddoFeedo tray.
