Baked Potatoes & Zoodles

The Instagram challenge for the #InstaWeanTeam this week is Healthy Meals on a Budget. My aim was to see what lunch I could whip up without having to buy extra ingredients. This dish is baked potatoes, and zoodles cooked up with mushrooms and onions.

Baked Potatoes:
Preheat oven at 400 degrees
Wash and cut potatoes
Grease baking dish and fill with potatoes
Drizzle with EVOO
*Try to keep potatoes to one layer
Bake for 45mins-1hour,
(Removing after 30 mins to flip them over)
Once cooked, remove from oven, add desired spices
*After this step, I like to turn the oven off and place them back in the oven for about 10 minutes

Zoodles:
Wash zucchini
Spiralize zucchini, estimating 1/2 zucchini per plate
Chop mushrooms (5 per plate) and onion 1/8 per plate
Add a little EVOO to pan
Put stove on medium setting
Add mushrooms and stir until cooked
Add zucchini and onions
Stir constantly for another 2 minutes
*You may add desired spices here. I added Cayenne pepper and all spice

Baby’s Full Plate:
Baked potatoes
Zoodles with mushroom and onions
Berry/Banana nice cream
Green peas

Dairy-Free Creamy Garlic Pasta

It was allergy awareness week for the InstaWeanTeam, and I made a tasty Dairy-Free Creamy Garlic Pasta with some added veggies to the original recipe. If you or your children dislike certain veggies, this is a great way to toss some in there, as the creamy sauce will fuse everything together well enough for you to enjoy every bite.

The original recipe is this one, and I made a few alterations. Definitely check out the original recipe!

What’s Different?
I lightly steamed some frozen spinach, chopped broccoli, shredded carrots, onion and garlic in a pot before adding the ingredients to the creamy sauce.

Olive/Chickpea Dip

Ingredients:
540ml Chickpeas (washed and drained)
225ml pitted olives
2 garlic cloves (finely chopped)
1 tablespoon paprika
Olive oil (or Honey Garlic balsamic vinegar)
1/2 tomato
A little water (To slightly thin the consistency
Olives, paprika, Flax seeds, cilantro and oil for garnish
1 Tablespoon of Flax seeds

Instructions:
Blend all ingredients in a blender or food processor and serve

Hand Mashed Veggie Medley

It’s hand-mashed veggies for our #InstaWeanTeam challenge this week. The ingredient was eggplant, and my aunt made something once that I knew I wanted to recreate one of these days. It’s simple, fun, tasty and perfect for the whole family.

It’s packed with veggies, and pretty versatile. Use it as a “gravy” for added flavour to rice, eat it on its own, pour some over steamed sweet potatoes or (my personal fave), have it with some salmon. I’d like to try it as a dip for raw veggies one day. The possibilities are endless! It’s the most photogenic of creations, but your tummy will thank you!

Ingredients:
1 large Eggplant
1 Zucchini
Handful of Kale
1 dozen Okras
1/4 red bell pepper
1/4 green bell pepper
Half 1 white onion or red onion
Basil, Oregano to taste
Cayenne pepper or black pepper to taste (optional)

Instructions:
Wash and slice up eggplant, zucchini, kale, okras
Fill medium saucepan halfway with water
Bring water to a boil, then low the burner to medium setting
Add the veggies and boil UNCOVERED until veggies are soft
Drain the water BUT save it (to thin the consistency)
Set aside

Finely slice onion, red bell pepper, green bell pepper
In a pan, sautee the veggies listed above
Add Basil and Oregano to taste
Add Cayenne pepper or black pepper to taste (Optional. Not for baby’s serving.)

Hand mash all ingredients together in a large pot
OR
combine all ingredients into a blender and blend at low setting

Boiled salmon (with onion, spices, bell peppers and tomato
Steamed sweet potato
Mashed veggies
Tomato sliced up
Fresh blueberries
