Eggplant & Chickpea Puree

Ingredients:
1/2 can of Chickpeas
1 large eggplant
2 tomatoes(chopped)
1/2 onion (chopped)
pinch of ground cloves
pinch of cumin

Instructions:
1.Wash your eggplant, cut off both ends, and slice into cubes
2.Saute on medium heat for 10 minutes or until tender
3.Add your chickpeas, onion, tomatoes & spices
4.Add 1/2 cup water or homemade veggie stock, stir and cover for 5 minutes
5.Remove from heat, blend
6.Serve desired portion, and store the rest in you Kiddo Feedo #silicone freezer tray

*For those who are new to the @kiddofeedo freezer trays, they are freezer and oven safe! I use them as an alternative to commonly used plastic trays, and I love them. You can freeze things like food, herbs and homemade stocks in them, and you can also bake in them. If you make a creative dish in your tray, be sure to tag me!

Grapes, Kiwi and Cabbage/Applejuice

Details:
Our two year old enjoyed some grapes, while our six (almost seven) month old chewed on these two kiwi slices, and than drank a full ounce of homemade juiced cabbage/apple. Juicing can take seconds to do, and it’s such a great alternative to store bought. No added sugar and weird ingredients.

Strawberry, Spinach, Lettuce, Apple, Mango & Flax Seeds

Ingredients:
3 leaves romaine lettuce
7 strawberries
1 apple
1 mango
3tbs grounded flax seeds
Handful of baby spinach
Almond milk or breast milk to thin consistency if needed

Instructions:
Blend ingredients raw and serve

Frozen Presentation Above:
Blend your apple, mango and strawberry together
Fill each compartment halfway in KiddoFeedo tray
Blend your spinach, lettuce and flax seeds together
Complete each compartment in KiddoFeedo tray
Cover with lid and place in freezer for up to three months

Grapefruit & Banana

Ingredients:
Grapefruit
Chia Seeds
Banana
Kiwi
Granola

Instructions:
Blend and serve

Notes:
It’s fit for babies age 6+ months (or when baby can sit up on their own), BUT you might want to omit the granola for first stage weaners, as it sometimes stays in clusters. Or you can grind it, but I haven’t tried that yet. This is being served up in our Simple Baby Foods reusable pouches. The back is transparent, allowing kiddos to see their meal as they consume it!

Coconut & Orange

Ingredients:
2 bananas
1 orange
2 strawberries
chia seeds
Coconut milk

Instructions:
Blend ingredients
Adding coconut milk to get desired consistency
Garnish with Chia seeds
Serve
