Red Kidney Beans & Roasted Cauliflower

Ingredients:
1 head cauliflower
1 chopped garlic clove
Extra Virgin Olive oil
1/2c cooked red kidney beans (follow package instructions)

Instructions:
1.Preheat oven at 425°F
2.Chop your cauliflower into florets
3.Place on a FLAT baking pan
4.Add onion, garlic
5.Drizzle with olive oil
6.Roast for 30 minutes
7.Remove from oven and add to blender, along with your cooked red kidney beans
8.Blend and serve
