Kale, Green Peas & Eggplant

Ingredients:
1 large eggplant
1/2 cup frozen green peas
1 handful fresh kale
Extra Virgin Olive Oil

Instructions:
1.Bring a pot of water to a boil
2.Add the peas and boil for 3 minutes or until soft
3.Drain peas and set aside
4.Heat up a pan with a little olive oil
5.Chop your eggplant and kale
6.Stir fry them until eggplant is brown
7.Blend all ingredients together
8.Let cool and then serve

**I froze the remaining portions in my silicone @kiddofeedo tray.
