Eggplant & Chickpea Puree

Ingredients:
1/2 can of Chickpeas
1 large eggplant
2 tomatoes(chopped)
1/2 onion (chopped)
pinch of ground cloves
pinch of cumin

Instructions:
1.Wash your eggplant, cut off both ends, and slice into cubes
2.Saute on medium heat for 10 minutes or until tender
3.Add your chickpeas, onion, tomatoes & spices
4.Add 1/2 cup water or homemade veggie stock, stir and cover for 5 minutes
5.Remove from heat, blend
6.Serve desired portion, and store the rest in you Kiddo Feedo #silicone freezer tray

*For those who are new to the @kiddofeedo freezer trays, they are freezer and oven safe! I use them as an alternative to commonly used plastic trays, and I love them. You can freeze things like food, herbs and homemade stocks in them, and you can also bake in them. If you make a creative dish in your tray, be sure to tag me!
