Plum Chia Pudding (No Cooking Required)

Chia pudding is a new thing in our home, and with good reason. Takes seconds to prepare, a few hours to set (overnight makes the wait feel faster), and you’re good to go! Just like smoothies and juices, there’s virtually no limit to the combination of flavours you can make with it. I LOVE flexibility! Hourray for chia seeds!

Ingredients:
2 plums
1/2 can coconut milk
3-4 tablespoons chia seeds

Directions:
Mix coconut milk and chia seeds in a glass/container
Seal the contents with a cover or cling wrap
Store in refigerator for at least 8 hours
*The texture will have thickended
After 8 hours, peel and pit the plums
Blend the plums with a little water (I kept it chunky)
Mix the chunky plumb puree with the pudding
Serve
