Hand Mashed Veggie Medley

It’s hand-mashed veggies for our #InstaWeanTeam challenge this week. The ingredient was eggplant, and my aunt made something once that I knew I wanted to recreate one of these days. It’s simple, fun, tasty and perfect for the whole family.

It’s packed with veggies, and pretty versatile. Use it as a “gravy” for added flavour to rice, eat it on its own, pour some over steamed sweet potatoes or (my personal fave), have it with some salmon. I’d like to try it as a dip for raw veggies one day. The possibilities are endless! It’s the most photogenic of creations, but your tummy will thank you!

1 large Eggplant
1 Zucchini
Handful of Kale
1 dozen Okras
1/4 red bell pepper
1/4 green bell pepper
Half 1 white onion or red onion
Basil, Oregano to taste
Cayenne pepper or black pepper to taste (optional)

Wash and slice up eggplant, zucchini, kale, okras
Fill medium saucepan halfway with water
Bring water to a boil, then low the burner to medium setting
Add the veggies and boil UNCOVERED until veggies are soft
Drain the water BUT save it (to thin the consistency)
Set aside

Finely slice onion, red bell pepper, green bell pepper
In a pan, sautee the veggies listed above
Add Basil and Oregano to taste
Add Cayenne pepper or black pepper to taste (Optional. Not for baby’s serving.)

Hand mash all ingredients together in a large pot
combine all ingredients into a blender and blend at low setting

Boiled salmon (with onion, spices, bell peppers and tomato
Steamed sweet potato
Mashed veggies
Tomato sliced up
Fresh blueberries
