Chayote, Sweet Potato & Spinach Puree

Ingredients:
1/2 Chayote Squash
Handful of washed baby spinach
1/2 Small Sweet Potato (Peeled and rinsed)
Lemon pepper (optional & depends on baby’s age)
1 Teaspoon of EVOO
Water or homemade stock or breastmilk or formula

Instructions:
Preheat oven at 400 degrees
Chop all ingredients and place everything EXCEPT the spinach onto a sheet of foil.
Seal everything in the foil and place in oven (see photos)
Remove after 35 minutes
Add the contents, PLUS the spinach into the blender
Add a little liquid (choose from above) to reach desired consistency based on your baby’s preference in texture

Notes:
This meal is textured, so strain it if baby is only on stage 1 baby food.
For the batch that I made, I justed used water to thin it a bit.
