Rice With Baked Asparagus & Onions

I made this when working on my challenge for week two of the #InstaWeanTeam challenge. Asparagus was the veggie of the week. I ended up posting this one, but I tried another dish that was great too. It’s as simple as cutting up and frying the asparagus before adding to some rice, but I chose to bake it instead.

1lb asparagus (washed and cut into 1/2 inch pieces)
1 tablespoon of crushed red chilly spice
1 tablespoon EEVO
1/4 chopped onion
2 minced garlic cloves

Set aside 1 cup cooked rice
Preheat oven at 375degrees
Grease a baking dish
To the dish, add the chopped onion, EEVO, crushed chilly, garlic and asparagus
Mix with a spoon
Cover with foil and bake for 30mins or until the asparagus is soft
Combine with rice and serve
