Asparagus & Red Potato Hash (Baked)

Ingredients:
2 red potatoes
2 fresh thyme branches
1/4 red bell pepper
2 garlic cloves
8 stems of asparagus
1/4 onion
1 tablespoon EVOO

Instructions:
Preheat oven at 400 degrees
Wash, trim and cut asparagus into 1/2 inch pieces
**I made them a bit smaller
Wash and chop red bell pepper, garlic cloves & onion
Pull the leaves off the fresh thymes
Combine all ingredients into a greased baking dish
Add EVOO
You can add spices here. I added a little crushed red pepper spice
Mix all ingredients together
Cover with foil and place in oven for 30 minutes
Remove, stir ingredients, and place back in UNCOVERED for 10 minutes
Remove, mix and serve

Notes:
I added a handful of chopped mushrooms at the last minute.
