Baked Plantains

Yummy plantains! I grew up on these, but I’ve only ever had them fried. My aim is to avoid fried food for the boys, so I baked them.

Ingredients:
Plantain (s)
Extra virgin olive oil
Spice or salt (optional)

Instructions:
Preheat oven at 375 degrees
Remove skin from plantain
Cut plantain in half
Cut each half into bite size pieces according to your child’s eating abilities
Drizzle the oil and sprinkle your desired spices/salt
Cover with foil and bake for 30-45 mins or until tender
