Homemade Guacamole

It’s my first time making guacamole and I have to say that I’m in love! I didn’t use tomato this time because I’m still on the hunt for the boys’ eczema triggers. I did decide to add cucumber since the boys don’t like it. I’m always looking to sneak something they hate in their food!

Ingredients:
1 ripe avocado
Juice from half a lemon
1/4 onion
1 garlic clove
1 cucumber slice (less than an inch thick…but you can add more)

Instructions:
In a bowl, place the following:
Whole avocado (minus the pit and skin)
Juice from squeezed lemon
Minced garlic clove
chopped onion
chopped cucumber slice
Mash the contents with a potato masher till avocado is desired consistency
Mix everything up with a spoon
I added a little lemon pepper before eating
