Omelette With Spinach

I’m always looking for ways to add a little green to their food, and found that eggs are absolutely perfect. Onions, bell peppers and tomatoes are some of my favourite additions to tasty eggs. Today we did spinach.

I had purchased a big bag of frozen spinach recently, and I’m pretty much tempted to add them to everything I make. While I’m able to hold back every so often, it was a great addition to breakfast.

Ingredients:
Chopped (washed) spinach
1 egg
Extra Virgin Olive oil or butter (optional)

Instructions:
Heat pan (medium setting)
Place egg in pan
Sprinkle spinach on egg
When the bottom of the egg is set, flip over with a spatula until set

The plate also includes homemade fries, roasted grape tomatoes, and roasted mushrooms.
