Diced Spinach, Onions, Bell Peppers & Ham

Made this fairy quickly for myself and the boys. What I love about chopped/diced veggies is that they can easily be mixed into a portion of brown rice, pasta or mashed potatoes.

1/2 diced onion
Handful of diced spinach
Drop of extra virgin olive oil
1/2 diced bell pepper (I used red)
Diced ham (optional)

Put stove on high and sautee until cooked.
I left the stove on medium because the spinach was originally frozen
