Roasted Veggie Puree

1 head broccoli
1 head cauliflower
Handfull of baby carrots
Extra virgin olive oil
All-purpose spices (optional)

Wash & cut vegetables to desired size
Place on baking tray
Drizzle extra virgin olive oil
Place in pre-heated oven at 400 degrees for 30-40 minutes.
Stir every 10 minutes
Remove from oven. Let cool.
Place in blender & add homeade veggie stock or water to get desired consistency.
Serve warm.
