Potato/Carrot Hash Browns

Super yummy! Our toddler actually didn’t fancy them as much as our infant. I fried these puppies because I’m not feeling well today and wanted to save time, but baking them is just as good. Might take a little longer, but a lot healthier. Either way, enjoy!

Ingredients:
1 Medium or large egg
3 large potatoes
1/2 cup grated carrots
spices (optional)
salt (optional)
Extra virgin olive oil or non-stick frying pan

Instructions:
Wash, peel and grate the potatoes into a bowl.
Rinse the grate potatoes and drain. Do this twice.
Squeeze out excess water.
Add the other ingredients to the bowl and mix them together by hand.
Either fry them till the edges are brown,
or bake at 400 degrees F for 15 minutes on each side.
