Loving this Cauliflower Rice

Cauliflower Rice

Special thanks to the great minds of Instagram for introducing us to delicious cauliflower rice. Our toddler won’t eat this tasty vegetable in its original form, but we’ve found a loophole! Below are details on how we did it.

Ingredients:
1/4 head of cauliflower
Half of an onion
Half of a red bell pepper
Extra virgin olive oil

Instructions:
Wash and chop your cauliflower & bell pepper (s) down as small as desired.
Chop your onion as well.

Combine ingredients and saute them in a pan on relatively high heat with a little extra virgin olive oil
Add spices as desired.

Notes:
After previously making spaghetti, I had leftover tomato sauce and mixed it in. Also, feel free to treat like rice! Have it with peas, with meat, in a salad or any way you’d like! For our infant, I steamed the cauliflower rather than saute.
