Baked Chayote & Carrot Puree

1 chayote
4 medium size carrots
1/4 onion (chopped)
3 mushrooms (chopped)

Preheat oven at 360 degrees
Wash, peel and cut up the carrots (size won’t matter)
Set carrots aside.
Wash and cut the chayote in half to remove the seed
Cut the halves of chayote into 1/4 inch blocks
Place in baking dish and drizzle with EVOO
Cover and bake for 30 minutes, or until tender
Remove from oven and add the remaining ingredients
Bake for another 10 minutes
Remove contents and blend together (Be careful. It’s hot!)
Serve, and put remaining portions in your Kiddo Feedo Tray.
Freeze for up to 3 months.
